Sunshine In A Bowl

My birthday falling at the end of April has always always meant bikini shopping, but as I am a lady boss now, I am spending less time at the beach and spending more time dedicated towards having a healthy work-life balance. So after about a year of having to macgyver with a body-pin to get my food processor working (after our ninja blender broke), I had decided this year I can hold-off on the bikinis and instead invest in a pro blender.. My blender arrived last night, and here I am already ecstatic to share my first recipe with you…

SUNSHINE IN A BOWL

Ingredients:

2 Cups Frozen Mango

1/2 of a Frozen Banana

1/2 of a Tangelo/Mandarin/Clementine or other citrus fruit of choice

1 TBS Maple Syrup

3 Coconut Milk Ice Cubes

Instructions:

Add all ingredients to blender (heaviest on top), and mix.

NOTE: If you need more liquid, you can always replace the coconut milk cubes with coconut milk, add the other half of your citrus fruit, or add another form of non-dairy milk.
