Vegan Cocao Chews

Date bottom:

  • 1 cup packed pitted dates
  • 1/4 cup cocao
  • 1 tsp vanilla
  • 1/4 cup almond flour
  • 2 tbsp coconut oil
  • 1/4 Pecans (or other nut)

Chocolate Topping:

  • 1/4 cup maple syrup
  • 1/3 cup cocao butter
  • 1/4 cup cocao powder
  • 2 tbsp coconut oil
  • Shredded coconut (optional)

Ditrections:

  1. Mix dates, cocao, vanilla, almond flour, and coconut oil in food processor. Once mixed, add nuts of choice (I Used pecans).
  2. Melt the cocoa butter, and remove from heat. Then add maple syrup or sweetener of your choice, cocao powder, and coconut oil.
  3. Add coconut oil or wax paper to the bottom of a pan (preferable around 8X6 in size), and mold date mixture to the bottom of the pan.
  4. Add melted chocolate mixture on top.
  5. Refrigerate for 15 minutes
  6. Add shredded coconut
  7. Refrigerate 15 more minutes
  8. ENJOY!
